Basicly at the moment all i have is the ipod and cables, ive installed itunes but i want to put some movies on there and im really struggling.
What MP4 converting software is best?
Can i wipe my ipod clean and start again?
I want to sort everything into the correct folders, how?

You can reformat the ipods hdd to wipe it clean.
What do you mean by sorting everything into the correct folders? how is it wrong?
the ipod will make itself a carbon copy of whatever your itunes library is like - so if you sort the library on your computer, the ipod will update to match it.
I've used dvd decryptor & psp video 9 to rip movies off dvd to ipod format (takes ages though) there is also a youtube to ipod program you can get which is quite good also.

Is it not in the main library also? should be the top left icon in itunes, with the playlists further down.
top left should be split up by music, movies, podcasts etc..

Check to see if it's set to automatically sync, if so, then you don't want that option enabled, it's a pain in the **** basically. When you click on the iPod in iTunes it should tell you wether it's set to auto manage or not and that is the option you'll want to disable.
As for folder ordering. If you mean the fact you can create a new folder in iTunes, then organize playlists of items into it, then I'd not bother with it, as when you move things to the iPod it amalgamates all of the lists in the folder into one playlist, it does NOT replicate the folder structure on the iPod. It's a bit stupid if you ask me.
If that isn't what you are on about then can you explain exactly what you mean, as iTunes doesn't have a folder concept beyond what I mention above. You simply have playlists containing items, be they audio or video. iTunes will not allow you to create a structure of items as you could do in Windows Explorer (or the Finder if you're a Mac person) for files and such like.
