Default public folders

some public folders have disappeared. Any ideas as how to get them back? not even sure where to look in the exchange backups, will they be in there?

They'll only be in the Exchange Backups if you've backed them up. Have you tried the Recover Deleted Items feature in Outlook? Not sure if that works with Public Folders though.

Someone hasn't accidently copied them somewhere by dragging their mouse?

They are part of the pub.edb database. Priv.edb is the individual mailboxes. What version of Exchange are you using?
