Is the exchange server behind a firewall? If so you will need a route through to the server. When Outlook connects to exchange server in full Enterprise mode is uses a multitude of ports. If you will be connecting to it via POP, IMAP or Web Access then life is a little easier.
As an example we use a VPN connection for remote users using Outlook (so effectively they have a direct route to the server) and also Web Access where port 80 on the firewall is forwarded to the exchange server (make sure you are well patched up on the server if you do this!). A better (and more expensive) solution would be to have a separate web server to host Web Access.

This article http://www.msexchange.org/tutorials/...changerpc.html may point you in the right direction. Basically you have to open up RPC and that may not be terribly prudent with all the nasties floating about the net.... AJM is on the money with his suggestions.
