Shuttle PVR & Sky Digital

I'm in the process of building a Personal Video Recorder, using:-
Shuttle SK41G
Athlon 2000+XP
256Mb PC2100DDR
60Gb ATA133 7200rpm HDD.
My question is, How do you connect a sky digi-box to the Shuttle, to record the digital signal? I know i need a separate card, but all the PVR advertised cards seem to use a TV tuner, or analogue satelite connection.
My aim is to record programmes to the hard drive, then edit the bits i want to keep, and then record them at near DVD quality to be played on standalone dvd player (Is DVD-R format the best one for this?)

Thanks Steve that looks like an ideal piece of software.
But i'm still stuck about the sky digibox connection.
Does anyone know if it's a case of just getting a graphics card with comp-video or s-video input & output, or do i need a video capture card (idealy without tv or satellite tuners). The shuttle has TV-out built-in as standard.
Any ideas?
