thats why I said add it in the last hour whilst simmering, keep the lid on the pan & the alcohol tends to lingerBTW why bother with the rice anyway, it only swells up in your stomach taking up space that could be occupied by food

PS I have also used Tequila, Southern Comfort, Bells & Tia Maria, depending on the mood
I also got some very interesting effects with black sambuca once, but you need to go easy on that due to the strong liquorice flavour
