Default Long brake pedal travel

I recently wore out my front pads and discs on my '03 STi and had them replaced. Just before this work was done I had to press the pedal down a fair way before the brakes started to bite. This persisted immediately after the pads and discs were replaced but went away after the pads had bedded in after about a day.

Now, a week later, the symptom has returned. My brakes seem to work fine except that I have to push the pedal much further than I used to. Also, if I pump the brakes it quickly returns to normal but this reverts to the long push almost immediately.

I have also noticed that the car pulls very slightly to the right as soon as I press the brake pedal but before there is any real slowing down. Before I turn the engine on, the feel of the brake pedal is normal.

I am clearly going to have to take the car back to be checked as I don't feel safe driving it at the moment but I'd like an idea of what may be wrong before I discuss it with the mechanic.
