I want to replace the brake fluid in my car (1992 Subaru Leone Turbo), which I regularly take by the scruff of the neck around the Nordschleife.
What fluid best to use?
Ferodo Racing Fluid, Castrol Racing? Others?
And: What precautions do I need to take? How to clean the brake system so that the new fluid won't eat the seals?

Silkolene racing fluid or AP dot5.1 fluids seem to be used by most.
Also get some braided hoses for a better pedal feel.
Once you have bled all four brakes there will be no trace of the old fluid and the new fluid wont contaminate the seals
