Will 18" wheels with 45 offset fit a classic?
As heading really. Tyres are 215/35/18 but wheels have a 45 offset.
IIRC classics should be 48?

These should be fine mate
Best with a 7.5x18" rim

Car is standard ride height. Wheels I've been looking at are 18X8 compomotives - will these still fit? Don't want to get into any arch rolling business.

You would really need to put a 225/35/18 tyre on to fit the wheel as 215/35/18 looks daft because its stretched across the 8" rim, The only problem with the 225's is they normally catch the arches if the wheel is any less than et50
Like u said you dont want to go down the arch rolling route.
