How do I replace these on a UK '99 classic shape ?

I presume I have to take off the caliper to get at the pad ?

Any recommendations for a brand / model of rear pad ?

You need to take at least one of the two caliper bolts off, the caliper will then swing to allow acess to the pads, I usually remove both bolts and take the caliper right off, on the hose of course!!

pad choice is yours, if you've got standard fronts, then do that on the rear, if the fronts are uprated, match them!!
