Brakes - Nearly smashed my baby!

Need some help...
MY98 Wagon (UK) with pagid 8 grove and fast road pads.
I have a problem, my brakes bitting point changes whilst driving! As in you depress the pedal one minute and it travels about 1/4 of the way down, the next time it could be right up the top or half way down. I have no fluid loss and I am currently running dot 5 which has been in the car for about a year. The brakes are new and are now well worn in. I also had a mishap (hence title) just after running brakes in (they where bitting well about 200miles covered) I went to slam then on as some tw*t was half way across road stopped! and as I did the pedal went almost to the floor (never gone down this far before ever) and the brakes did not seem to bit well - seemed like the was not enough pressure. This has not happened since and took car straight to garage who could find no wrong. Breaks where bleed well when system fitted, has anyone else seen or had anything like this??? I have been told that this changing pressure could be caused by master cylinder?
