I just had winter tyres put on my STi7 and they are rated as 91H or 210KM/h. Does anyone know what this mean in real world terms i.e can the tyre be run above this speed as its not hard to do this on Autobahns.

Not entirely sure what happens above that speed, but the tyres are not designed to be run above it. Insurance companies could be a bit "negative" about running lower rated tyres than the OE ones in the event of an accident, especially if you were exceeding the rated maximum. Also wouldn't have thought it would do them a lot of good. Mind you, I think the speed ratings are carried out at max inflation pressure, which means they would fails before ones run at the standard pressure would.
I found that both Conti and Michelin make V rated winter tyres. I'm going for the Pilot Alpins, as Conti don't seem to import theirs into the UK.
