Saw a Blue STI-UK with Scoobymania written on the side in gold letters (Car Park next to pier) and a White Classic Shape cruising down the beach front M or N reg (** ***)

Ahh, that would be me (it's actually a JDM spec STi). I presume yours was the UK300? 
Got dragged there under protest, great day huh. 16 degrees, overcast and sporadic rain.

The UK300 would be mine. I also spotted your STI with gold lettering in the car park next to the pier. Also got dragged to Skeggy so my girlfriend could visit her mum. Don't recommend on buying the copied DVD's there. Got home and none of them work.
