Loads of ways to immobilise it -

- disconnect crank position sensor
- disconnect starter motor solenoid wire
- remove fuel pump relay or fuse
- lift offside rear seat & unplug the connector there for fuel pump
- remove coil pack, hide it in the house

Any one of these would work. Most effective would probably be crank sensor and/or removing fuel pump relay. It's a sad state of affairs when we have to think like this, isn't it?
