I really like the K Sport 8 pots I have on mine. I started off with the classic 4 pots though, so there's probably more of a contrast for me changing to the K Sports compared to you going from your Brembos.
If you did upgrade, I'd recommend you go straight for a decent pad like DS2500s or Bluestuff NBX; I found the standard K Sport pads to be absolute rubbish.

The standard road pads are nothing short of binliners.
I've had pads with no lining on them brake harder.
But maybe you are looking at this wrong.
With a decent set of pads and some good discs the STI's should be more then enough for anything you can throw at them.
For a decent pad look at Performance Friction 01, Pagid Blue (not EBC BlueStuff) or Carbone Lorraine RC5 or 6.
For disks you can go with cheap blanks, and replace them a bit sooner, or upgrade to a fancy 2 piece disc, which is lighter, keeps the heat out off your bearings and hubs, and have less chance of warping. The 2 piece disc is more expensive, but when they are work you can buy just the outer rings which are cheaper.
If you look around you can find 2 piece discs and a good pad for less then 600 quid, which is cheaper then a D2 kit for example.

K-sport have done some work with their pads and are supposed to have improved them although I've not heard any feedback yet. If I had the cash I'd be upgrading right now as it makes sense to go from WRX 4-pots straight to something like a k-sport/D2 option rather than spend on getting a decent STI set-up with second hand calipers
