I used to run electric PS on a old Escort Cosworth rally car of mine. Quite easy to do, just removed all the old PS system and got and electric system off a fiat punto MK2. I got the whole column with motor etc of eBay, think I paid around £250 but this was 9 years ago.
Had to do a bit of fabrication to get it fit and a mate who is an auto electrician to make up a loom for it.
I ran it for a year without any problems before I sold the car.
Have a look on the internet to see if someone does a kit for the impreza.

corsa c steering column is what the kit car people use. it has the motor attached to the column and you can buy them off ebay along with a box that you plug in instead of the controller box so it can be adjusted.

So why do you want to do away with it?
If its for cost reasons then its not worth it, to go electric would probably cost you a small fortune, if its for feel then its not worth it either (electric pas is reknown for losing "feedback").

the cheapest way is to just get rid of the old powersteering pump and belts and get a pug 106/saxo electric pump just get someone to make up a few lines and away you go
