Temp gauge being really random!!

Temp gauge being really random!!
Hello guys, wondering if anyone has seen this or had this happen to them!
Right;
My sisters boyfriend has had his second scoob for a couple of weeks now, and everytime ive been out in it the temp gauge has always been really low and never gone over quater of the way up! Untill on Xmas day when we went to my other sisters in Lemington, temp gauge was really low all the way there on the motor way and went up a bit when we were in the town area! Fine accepted that as we were not moving as quick!
On the way home was the same untill we got off the motorway and come back more of a back road rout where it went right down to as low as if you had just started the car on a really cold day, then went up to where mine always sits (Half way up the gauge)! We both thought this was really weird, but came to the conclusion that there was nothing really wrong as it didnt go over half way up the gauge!
It is a "98" reg with 112'000 miles and a PPP on her, and she runs like a dream!
If anyone has got any answers that would be great!!

Replace the thermostat and it should cure all of that, sounds like the old ones stuck open. And berore anyone trys to shoot me down in flames be very carefull as I am a mechanic of 20 years experiance.
