Question

I'm happy I know whats going on when you have your steering geometry altered, i.e. the angles of alignment in 3 planes. So what do they do when they set your "tracking"? Is this something else, or just the toe-in angle adjustment only?

Yes, tracking is just checking whether the wheels are facing forward or not.
