Steak - restaurant being up themselves, or a good thing?
I went out for dinner with a client last week and we went to a pretty normal run of the mill restaurant i.e. not silly prices or over the top menu or anything. It has a repuation for good steak which is rare in the UK these days so we both ordered a fillet steak.
The waiter asked how we wanted them cooked and I said rare whereas my client said well done. The waiter stated that the chef would only cook steaks rare, medium rare or medium so my client repeated the fact he wanted his well done or not at all.
A stand off ensued and begrudgingly the waiter agreed, but after that had a bit of an attitude about him for the remainder of the meal.
Now my client asked me what I thought and I stated that I felt the waiter was a out of order with his subsequent behaviour but for what it's worth I agreed with the chef only I wouldn't have offere medium either LOL!
My client saw the funny side, but I could tell he was still ticked off about it.
So who's right?
For me anyone who cooks a steak medium or well done needs a good slap, but that's just me

Medium rare for me.
I never order steak from uk restaurants anymore after having eaten in the US and Canada. It's always a disappointingly small cut and a depressingly expensive price. I also find the service in UK restaurants is 'usually' below par, again, on comparison with the US and Canada.

Crikey seems like I am in the majority for once.
Ali, that was my thought exactly, why wreck a good fillet steak!!
I am not sure about mooing but a good vet should be able to have it back on its feet

Well, I'll stand up and be in the minority. Unless there was something specifically stated on the menu, he should be able to have his steak any way he wants.
If the chef is so particular that he doesn't like to cook steak so much, I go back to my original point that it should be stated on the menu.

It has to be rare or it gets sent back to the kitchen. The waiter however should know better and to have an attitude like you suggest F1 is out of order.

What a ****, why bother ordering steak if your not going to eat it as it should be, it's like ordering hot ice cream, chef is spot on imo, it's his rep that's at steak.
Blu is the colour.
As for the comments about decent steak, so true, very difficult to get a good steak at anything resembling a decent price in the uk, one tends to pop out and club ones meat to death and eat it on the hoof.

if you`re eating it then you should be able to have it the way you want it... esp as they asked you how you`d like it! and the chef should remember who pays his wages...

How likely is it , that the steak would have been ruined ? Im sure fillet steat would be burnt to a crisp on the outside to get it well done on the inside as its quite thick. Chef was probably doing customer a favour , and saving throwing out a ruined steak.

Yes a steak should not be cooked any more than medium but your the customer and if you want it well done it's up to you.
Can't remember who it was or where we were but we were ordering steaks and someone in our party wanted well done, "so ruined then" said the waiter with a smile But they still got their steak the way they wanted.
I've eaten in a few Michelin star type places and you usually get asked "the chef prefers to serve this medium rare is that okay with you" which kind of put the onus on you that if you want it any other way you're saying your a better judge of food than the chef is, and anyway my answer would always be that its fine with me
