Ok so whos got the best receipe for the above?

Make sure you finish it off with a slice of french bread lightly fried in olive oil then topped with cheese. MMmmmmmmmm!

Sounds good, been told Gruyère cheese the best to use.

I have a too-long-to-type-out recipe but the starting point is a fabulous stock starting off with oxtail very long and slow cooked. Herbs and brandy are involved with croutons on the top.

70's dinner parties (lovely too )

Yes a good stock is a very important base for any good recipe.

Too young to rmember them but I guess you had something like:

Chicken and mushroom Vol a vents or pate on toast

Steak and chips or Coq Au Vin

Black Forest Gateaux

All washed down with a nice bottle of either Blue Nun or Black tower.

We are not talking about a miner's reunion dinner here

Granted there were some pretty naff dishes - but steak & chips, NO - which at our residence might have been

Proper Champagne cocktails

Then French Onion or perhaps Avo with prawns or grilled stuffed courgettes or smoked salmon

Beef Wellington or a chicken dish (when poor)

Home made ice cream, profiteroles or lemon chiffon pie

Cheese selection

Never Blue Nun but perhaps a Pouilly Fuisse or Chardonnay (if poor). Usually a Cote du Rhone of some description.

Coffee and cigarettes!! Then lots of Port or Brandy.

None of this Nouvelle Cuisine bollox

Beef Wellington makes for a lovely dinner party dish. I always prefer to add some pate into the duxelle as I find it makes it far tastier. Always served pink with a lovely rich Madeira sauce and served simply with some buttered Chantonnay carrots and fondant potatoes. Lovely!

Delia does a good French Onion soup in the Complete Cookery Book.

Used it for years and it's always a good one.

Chip Beef Wellington is my "Regimental Dinner" scoff and is superb. 200 years soon 1815 and all that .
