Default Good French Onion Soup Recipe

Used to love this but havent had for ages and never really tried making it myself. This Delia Recipe looks spot on:

French Onion Soup from Delia Online

But has anyone got one theyve tried and would reccomend?

Thanks,
Simon

Seen it done by various TV chefs, as well as by French housewives, and that seems to be about right, slow cooking seems to be the answer, and masses of onions. I've been told that the large Spanish onions can be to pungent, but I've never cooked it myself. The missus has done the Delia recipe and the results were pretty good.

I don't think you can go far wrong with Delia.

Seem to remember using Oxtail for the stock and red wine. Supa dupa soup though

My stomach's rumbling now It's rationed in this house as well, due to the damage caused to the ozone layer and my undercrackers when I eat it.

I was inspired after a work trip to Czech Republic. Had it in restaurant and it was spot on, especially the floating jumbo crouton with melted cheese on it

Will give the delia one a bash tonight but will have to replace the beef stock with vegetable as my girlfriend is a veggie. Will let you know what its like.
