I don't have this problem with my iPod Touch, so perhaps it is the way that the videos have been converted? What do you use?
If you go to YouTube and choose a video over 3 minutes does it do the same thing?

Try a full restore.
1. Turn iPod Touch OFF completely.
2. Plug iPod Touch into PC/MAC while still off.
3. Hold the 'Home button' and 'sleep/wake' button at the same time for at least 5 seconds.
4. The Apple logo will appear
5. When this happens release the 'sleep/wake' button BUT KEEP HOLD OF 'HOME' BUTTON
6. Your iPod will reboot (Apple logo)
7. iTunes will recognise iPod in 'Recovery mode'
8. You will be able to 'restore' your iPod Touch now.

Nope, but you will have to restore it from iTunes. Just make sure you connect your iPod to iTunes and let it back it up first. Oh and you may want to try step 3 with the iPod turned on if it doesn't take the first time.
