Raymond E Fiest (Magician et all), Janny Wurts (Mistwraith, Daughter of Empires stuff), Stephen Donaldson(Chronicles of Thomas Covenant), Robert Jordon (Wheel of time) spring to mind
Now winters here and the bikes put away alot of train journeys = alot of reading for me

Stephen Donaldson's Gap series, Iain M Banks Culture stuff, Greg Bear and Robert Heinlein (sp?) are immediate thoughts...

David Gemmell ? In particular the Drenai series, Lion of Macedon and the Dark Prince.
Raymond E. Feist / Janny Wurts. The Riftwar Saga (Magician / Silverthorn / A Darkness at Sethanon) and then The Empire Series (Daughter of the Empire / Servant of the Empire / Mistress of the Empire). These books will keep you going for quite a while, and ranks as some of my all time favourites

Peter F Hamilton - Night's dawn trilogy.
Very, very good.
I also like Turtledove's 'Darkness' series, though his other stuff doesn't grip me.

Iain M. Banks is worth a read. 'Against A Dark Background' 'The Palyer Of Games' most of his stuff is pretty good. He writes fiction as well as S/F 'Walking On Glass' is pretty good. 'The Wasp Factory' is almost a must read.

I have to agree for the most part with Chuck, in fact completely with Chuck!
I enjoyed reading Eddings but I revisited them and found them a little formulatic now... just my opinion obviously.
The Wasp Factory by Iain Banks is disturbing...
Note that when Banks writes 'normal' books he writes under Iain Banks, when he is doing sci-fi then he is writing under Iain M Banks.
Fiest is great, really enjoyed the Faery Tale (as it used to say on the cover) not a bedtime story!

I read Wasp Factory and found it a little disturbing too!!!
Anne McCaffrey is a good read, Brian Lumley if you like a bit of horror I heartily recommenrd, Anne Rice, Piers Anthony, loads of the above listed and Maggie Furey - I have just started reading her books and enjoy them immensely.
