Do a Google search for 'Hymn' + .mp4 and you should find a neat package that does this for you FOC. It's not an elegant interface but it works. It also depends which version of i-Tunes you're on. They don't have de-encryption tools for the very latest versions.

They will be AAC Protected files and so you cannot use iTunes itself to convert them to mp3.
The simple method, and one I use is to burn them to a CD-RW (ensure in your advanced settings, you have burning set to "audio cd"), then go into your importing settings in iTunes and make sure it's set to import them as MP3 files. Then simply rip the CD.
The reason for using a CD-RW is so you don't waste a CD-R, plus you can use the same CD-RW over again the next time you need to do this.
You could also use something like dBPoweramp Music Converter (dMC) which I think allows you to convert from Protected AAC to mp3.
