What should my Mum have recieved back on a £5 each way bet on HedgeHunter fixed price of 11-2 ?
She was given £11.88 surely this isnt right.
She only bets once a year, and if the bookies have ripped her, I shall have to pay them a visit.

£5each way, means you are placing 2 bets.
bet 1) £5 on Hedgehunter to win - it didn't so you lost that bet.
bet 2) £5 on Hedgehunter to get a place (1st, 2nd, 3rd, 4th) - it did so you won that bet. A place always pays out a 1/4 of the odds. So (11/2 * £5) / 4 = £11.77 rounded up to £11.78

EW is the only way to bet if it's your once a year National bet. Generally EW becomes worthwhile above 33s, IMO.
