Xmas party snacks....
ok, I just tried one of these prior to poisoning a few guests tonight , and it was rather so I thought I'd share....
Toasted Garlic Mushrooms..
8 mushrooms, about 2"-3" wide
butter
fresh parsley
fresh chives
2-3 cloves garlic
white sliced bread
salt & pepper
wash mushrooms, cut stalks off as close to body of mushroom as possible. Get a metal bottle top ( I used a vodka bottle top ), push the top down over the remaining stalk, and push down and rotate to make a nice neat cut, then scrape out the remaining stalk and mushroom with a teaspoon taking care not to split the mushroom, but not right through, do this to all the mushrooms.
get a slice of bread, cut off the crusts, and turn into crumbs, put in a bowl, add the finely chopped herbs and mix in with plenty of salt and pepper.
melt a good dollop of butter, and add crushed garlic, add this to the crumbs and herbs, and mix into a runny paste type consistency. Put this into each mushroom, leaving a bit less than the thickness of a slice of bread from the top.
Then get the bottle top again, and use it to punch a disc of bread out, put this disc of bread into the mushroom, spread butter thickly over the bread, and onto the mushroom....repeat for all mushies...
olive oil in baking tray, into an oven at 200 deg C...get the oil and tray red hot....
Chuck the mushrooms in the oven at 200 for 10 mins, then finish off for 2 mins or so under a red hot grill to fully toast the bread, the bread rises up out of the mushroom again like a stalk, but its a nice garlicy crouton.......serve & enjoy
