Im a Mechanical Services Building Design Engineer. I design air conditioning and ventilation systems for Hotels, Banks, Conferance Centres etc etc.

It's possibly not an a/c issue exactly but is related - kind of
I work in a factory where we make toffee products. We have a room which has a machine which crushes the toffee down to various sizes (3-10mm for example). In this room we have recently installed an a/c unit as in summer the hot temps makes life difficult. The a/c has introduced a new problem we believe. Even though the room is now a better temp for the toffee, the a/c unit appears to have upped the moisture content in the air (is this correct?), which affects the toffee in a similar way to the heat
Is the only way forward a de-humidifier? We do have a large one in the room, but doesn't seem to be able to counteract the effects of the a/c unit.

I know this is all a bit vague, but i was hoping one of you lot may have a suggestion or two

Should have bought a dry-air cooler...

Sounds to me like you got an evaporator cooler.

you could always pressurise the room. becuase the air will be cooler it will be natural for any heat to travel to the room (and laden with moisture) whenever a door is opened. would be good to know what kind of AC unit you have installed. pressurising the room balances out the air, there will be a pressure drop in the area as the temperature also drops. bring in some fresh air and control it via a damper
