Off the top of my head I can't think of a vegetable that you can't eat raw. IIRC Brussels are part of the brassica family which includes cabbage. These have a chemical in them which is quite pungent. I believe the extract was orginally used to make mustard gas, it's what gives cabbage etc its slightly zingy mustardy flavour. Boiling the veg breaks that down, along with the vitamins and many other good things. No harm in cooking veg, but it should still have some crunch left in it at the end.

I don't think plants belonging to the mustard family (cabbage, sprouts etc) have anything to do with mustard gas. Mustard gas was so called because in it can smell of mustard, but its actually made by chlorinising ethylene. Shame really.... at least sprouts would have been useful for something!
