I flew with britania airways from gatwick it was a 24hr flight, had 2 stops for an hour at each to refeul. It cost 569.I flew to sydney but you will have to get a connecting flight to brisbane.I booked mine about 3 months before i flew so if you book it very soon you may get sumwere near this price.I think you can also fly to melbourne then onto brisbane but i dont no what the cost of that one is.

Try ebookers. You should be able to get to Sydney for about £600 return with the flight to Brisbane for about £50 (one way).
I've been to Aus a couple of times. First time was on Britannia and second time was on Malaysian. Last time, Britannia were about £550 and Malaysian were £600. Britannia use 767s with 30 inch seat pitch. Malaysian use 747-400s with 34 inch seat pitch. No competition!
As a *ahem* larger gentleman, space is appreciated, so Malaysian won. Malaysian also had the advantage of a single stop and that the 747's cruising speed is about 100mph faster than the 767, so the journey is more like 22 hours than 27.
If you want to take a chance and keep the price right down, Britannia used to sell off vacant seats at lower prices the closer you got to the date of travel. If the standard price was £599 and there were seats available on the Wednesday flight 2 weeks ahead they would be sold at £499. One week ahead, any seats went for £399. On the Monday, any remaining seats for Wednesday were available at £299 return.
