Was in Sardinia so didn't seem to have the same sort of licencing laws tho free pouring is defo the way forwards, if you have good pourers then it does not take long to get it near to spot on tho you have to trust your staff and it is impossible to do gp and prd calculations accurately!

A Mojito lots of combinations of this but as a short drink basically fresh mint, fresh lime, and brown sugar in a tumbler use something to crush the ingredients (pestle?) together in the glass, add loads of crushed ice (fill the glass) and then fill with light or white rum. If you need to use measures then add a double measure and top with soda. Takes a bit of practice to get right but are worth it! Can replace the brown sugar with sugar sryup to save a bit of time (also easier to sweeten up more)

Caprioscas again probably loads of variations but the two popular ones were lime or lime and fresh strawberry same as Mojhito but just streight vodka or a mix of white rum and vodka in some places. It is easy to do variations of this one with kiwi or other softish fruits that can easly be crushed

and lastly a Caprina again the same basic idea as above but the spirit is diferent but I can't remember the name of it (white light brown south american!)!

Pina Colada loads of ways but a good tasting cheats recipie is equal measures of white rum and malibu, fresh pineapple juice and a dash of cream shaken over ice and strained not a proper one but quick and tastes ok!
