Drunken Bungle Whore

OK - so here's what I'm after and I'd welcome any suggestions! Would like a hotel somewhere in UK that meets the following criteria:

Near the sea - preferably overlooking it
Near mountains/ big hills
Country style (big log fires, that kind of thing)
Leisure facilities - indoor ones - planning a March visit
Good food & drink!

Hmm - think that's it - anyone got any suggestions....?

Never been to that hotel, but, eastbourne is near beachy head (I think!) and thus it's a biggish hill/cliff type thing.
