Thanks, reading my mind? Hopefully still the second post so, if anyone has any ideas of flights that may stop-over in Hong Kong as well as Singapore I would be interested in knowing too.

I could be wrong, but I think that Singapore Airlines is the only one that flies from London to Singapore and then from Singapore to Auckland.
Thai flies via Bangkok.
Qantas flies via Singapore, but you would also have to go through Sydney.
Cathay Pacific flies via Hong Kong.
Air New Zealand flies via Los Angeles!
You could try BA, Lufthansa or one of the other European Airlines, but you're probably best off with Singapore Airlines - it's the dogs bollox. I lived in Singapore for ten years and flew return to the UK 5 times a year. I've tried them all and Singapore Airlines, Cathay Pacific, and Thai Air are in a class of their own!!

I'll go with the comments - the Asian airlines are best; they seem to remember what customer service is about.
Cathay, Singapore and Malaysian Air are mostly equipped with personal TV screens which makes a huge difference to flight enjoyment.
You might also get a good stopover deal from Cathay in Hongkong (it's a good place for shopping for electronics / CD's / Software).
