The Outlaws have a house in the Pyrenees about an hour from Carcassone. The weather is quality, lots of sun in the summer and loads of snow in the winter. Not many English down there yet so the locals are quite welcoming!

The south west is good, around St Cyprien and towards the Spanish border. Plenty of camping options or Gites.
Tends to be very busy in July, August time, but plenty of beach for everyone and usually reliable sun.
I go with my family every other year, but when I was younger went for a month every year, sometimes in the mountains and others somewhere along the south coast.

Where do you fly from and to?
Ryanair have some good flights from Stansted and if you live in the north Monarch go to Barcelona from Manchester which takes about the same time from Barcelona to Carcassonne as it would to get to Stansted from Manchester if not quicker, traffic is tons better over there than here.
