Can the cars with 'British Transport Police', that you often see lurking furtively around stations, nick you for speeding?

I saw one on the M6 today, everyone was crawling past at 69.999mph and creating a hell of a tailback.

Also, will normal local police cars (astras etc) nick you for speeding on the motorway?

Only if they have speed monitoring equipment .

Any Police vehicle can be used for speed enforcement, and British Transport Police have exactly the same powers and authority as their county cousins.

However, if the vehicle used is not a vehicle used for traffic patrol purposes, then the speedo must be checked to ensure that it is calibrated as soon after reporting for the offence as is practicable, this usually means checking the speedo over the measured mile against a certified stopwatch at 30 and 60 MPH.

So in a nutshell both BTP and local divisional vehicles can do you for speeding, however they usually don't bother unless the speed is that excessive that something has to be seen to be done, but they must hand over to a traffic crew as soon as possible.
