Since I am one of those 'hippies', I might be able to help you out.
So, here is my advice:
Don't try to cook any Tofu etc. if you've never done it before.
If I would be invited to your house (or to any non-vegetarian friend) I totally understand your situation or your meal worries and would definitly prefer having good 'side dish' like:
- Fresh Salads (Tomato, pasta, cucumber etc.)
- Spaghetti with tomato or pesto sauce (remember, bolognese has minced meat in it).
My favorite dish would be:
- Any Rice meal incl. Peppers, Sprouds, Mushrooms (any kind), Tomatos, and LOTS of Soya sauce. (you can always make your steak next to the above)
Additional advice for free: Don't bring up the topic 'Vegetarism' every 5 minutes. The less you talk about, the more they will enjoy the evening!!! Hope this was of any help.

Best to buy the Quorn just for the packet to show them it's veggie, but use 100% pure beef mince and throw that reconstituted mushroom sh1te out.
Then smirk as they chomp away.
You won't be able to keep a straight face if they compliment !

Cos most people cant understand people who cant eat meat I would guess.
It always cracks me up that a lot of the veggie stuff is purposely made to look like meat i.e. sausages, burgers etc.
Simon.

Why are so many people anti veggies? It's spoken of as if they have something wrong with them. I don't understand it.
They have ... anyone who can't appreciate the majesty of a bacon butty is obviously in need of help

I'm married to a veggie. I find it's advantageous 'cos all my relatives take pity on me and roll out the steaks/roast chicken/etc whenever we visit them, so I probably eat more meat than most people do.
What to feed them? Well, spag boll using the Quorn mince is easy and indistinguishable from the real thing. Or M&S do some very good pre-made veggie meals. Alternatively, just do a noodle stir fry with a load of veg. There's a good few veggie recipes at www.deliaonline.co.uk and at www.taste.co.uk.
I always like Viz's top tip: "Got a veggie coming round to dinner and don't know what to feed them? Well, today's soya non-meat alternatives are so good, just feed them chicken - they'll never know the difference".
