Depends on what steak it is and how you like it cooked. Very hot frying pan is best way tho as domestic grills will not get hot enough.

Stab it a few times then rub mustard and garlic in. Fry in a very hot pan, couple of seconds on one side then the other, then a couple of minutes on each side to finish the job.

No need to cook it then, from my experience it should have turned brown by now

Do you have a griddle? they really keep their flavour done this way in a little olive oil.... or maybe done in one of those George Forman type grill thingys ... I like to fry chopped onions, bacon , mushrooms, and some lloyd Grossman basil & Tomato sauce with it, yummy,

Steak and pepper sauce

it's got to be Scottish beef.

crush about 1tbsp of black pepercorns and press them into the steak.
Heat the frying pan very hot.
Cook the steak, then add two tbsp of brandy set on fire then 1/2 a carton of double cream.

Stir, heat and serve.

Heavy bottomed griddle pan a hot as you can get it (smoking)

Bash your steak out, bit of sea salt, bit of black pepper, into the griddle for 3 mins a side, once it's in the pan, don't mess with it until it's time to turn it over or take it out (no prodding or lifting or squashing).

If you want a nice sauce, throw in some onions and a sprinkle of sugar and a splash of red wine.

Rev, why bash it. Buy decent meat itll be tender anyway.

As for Scottish beef. Recently a survey of top British chefs(Mossiman,Blanc, white et al) Revealed that they thought Welsh Black to be the best. Couldnt agree more.

You need to fry it in a hot pan for 15 seconds a side in the beginning, so that the damn thing is "sealed". Then leave it in for 1 minute or 2 a side. That will make a nice rare steak Leave longer for medium cooking.

It's agood idea to marinate it in olive oil, garlic and herbs for half an hour each side before that. Never put salt on raw meat or it will lose its juice!
