I'm not looking to buy a huge combat knife for my fam in the hood but a decent set of kitchen knives....

We bought a set from Tesco a year ago and I'm better using a spatchuler to cut the apples up.

Knife sharpener ?

 

This is the problem! Anything that is a sensible price is not worth buying! If you get a great set of kitchen knives, they will last you a lifetime. When chopping becomes easier, then cooking becomes more fun, you won't regret spending a bit more and getting something worth while.

Ceramic knives are immensely sharp, but are also very brittle, so are limited on what you can cut with them and need a softer cutting board. Great to have in the toolbox, but as a rule I'd go for steel. Japanese steel knives are the ultimate, but come with a hefty price tag. You can get some great knives at a lower price (although still expensive) without sacrificing too much quality, which for most enthusiastic cooks will be more than enough.

 

Opinel do some good kitchen knives, but I've always bought them at the factory in France where they are probably cheaper.

I find even cheap knives cut OK, as long as you have a sharpener (and use it regularly). In my experience, even reasonably expensive knives go blunt, and need to be re-sharpened often to keep a keen edge.

I have something that looks similar to this and it's made a massive difference to my knives.
