Tom Kerridge's method of a trivet over a roasting pan of water, foiled, works well.

Use a roasting bag Phil, Skin side down will keep it moist. Personally I wouldn't buy a crown as it's too lean, you need a bit of fat for cooking, flavour etc.

I think last time we used a roasting bag with good results. Not sure as I'm not into cooking Turkeys.

If it were down to me I'd have a pork roast with lots of crackling.

We currently have our 7kg turkey in a bin, soaking in a brine fluid (with a bottle of white wine, garlic, Fennel, juniper berries, mustard seeds and black pepper)

This is what I'm doing tomorrow. We're doing meat on rotation every year now. Beef last year, rolled shoulder of Pork this year. We'll probably get back on the Turkey next year........

3lb crown here with bacon and things stuffed under the skin with a bacon weave. Literally rashers of bacon weaved together and placed on top. It's meant to help keep it moist and it did. It turned out a treat.

7.2lb local duck stuffed with oranges, Rosemary and garlic. The fat made an incredible rich tasty gravy.

A pork joint with salt rubbed in to get the crackling really crispy.... The whole meal went down a storm. Everyone's favourite seemed to be the duck.
