Apart from looking damn nice do they make a whole lot of difference compared to normal ones? How easy are they to fit?

Depends which ones you get really, I've got the Sti pedal set, I prefer them to std ones, they were easy to fit as clip over the top and then secured using ickle allen key bolts....

Just be careful when shoes are wet (unless they have some rubber inserts)

Rubber inserts are a must, otherwise it's an MOT failure.
