Track Day Insurance??

Hi,
Hoping for some help here, please excuse any ignorance on my part.
Myself and a good friend are looking at the possibility of buying a track
day car. We're looking at the likes of a pug 205 gti or Golf gti valued at
around £2k.
What are the possibilities regarding insurance? Essentially all the car is
going to be used for is travel to and from tracks and for track days
themselves.
We really only want to be covered to comply with the law but want to be able
to do track days without breaking any rules or regulations.
Someone must already do this. Any help appreciated,
