Changing 03 head unit
You could go for a single-din radio/MD in the front (Sony do a good one) with a pocket to fill the extra space, then bung a 10disc CD multichanger in the back. If the 03 is anything like the 02 then the ICE install could be a nightmare - if you need any advice, mail me!
I'm waiting for my new STi and am planning on changing the factory unit ASAP.
I'm going to replace mine with a Dension DMP3 player. They make several versions, but are just about to launch an in-dash model. This is a 20Gb hard disk unit that is a single DIN size. It stores somewhere in the region of 300 CD's and has an integrated tuner.
They also do larger capacity hard disks, which are stored in a remote unit and then connected either to your original CD player / controller or to their in dash controller.
I'm going to be connected it to a 4-ch amp and up-grading the speakers.
Cost of all this is going to be a lot less than the £1500 you have.
The 20Gb HDD / tuner model is going to retail at less than £400. So with an amp and speakers I'm reckoning on still being able to have a slap up meal at Mrs Miggins for £800.

The only remaining question is what to do with the other single DIN gap. Subaru can supply us with a double to single DIN adapter, which blanks off the space, or it could be filled with one of these:
