Default Picking a top quality Head Gasket, which do I get?

Well after performing a block check I've concluded that one or both of my head gaskets are on their way out. Car still drives fine with no issues except for coolant bubbling out the overflow after a good flogging. Test later revealed that exhaust gases are indeed leaking into my cooling system.

Now I am on the hunt for a well known head gasket. My question is what you suggest I go with for a vr3 ej20k Sti?

Not only that but how do I determine what thickness I need before actually removing my old ones and checking?

I've been browsing Roger Clarke Motorsport and a few other places but I'm lost. Looking for some insight from people who have done this in the past.

As above - Cosworth, Cometic or standard Subaru MLS

It's important to make sure that both the block decks and cylinder heads are perfectly flat before installing the new gaskets - I will normally reface both prior to replacing gaskets, obviously the bottom end needs to be split to skim the deck surfaces.
