Pressure and Temp? help please!

Afternoon people
Having just bought and had fitted a pod and 3 gauges(boost,oil press, oil temp) from a fellow member on here. I was wondering what :-
1. What operating temp is the oil when warm and ok to take some "spirited" driving ? As oil temp gauge starts at 140deg F (sandwich plate fitted)as no reading is showing on gauge, but all wiring and sensors are fine
2 Oil pressure on tickover is showing 2-3 bar , normal driving 5 bar , and when on boost 6 bar is this all ok?
My car is an import sti wagon standard turbo (vf28) de-cat and large k&n air filter,walbro

OK, mine is a classic running a forged 2.5 litre engine with uprated oil pump, and very good oil, which has only done 1500 miles since an oil change. I get the following:
Oil temperature.
Rises fairly slowly to around 90 degrees C, where it sits all day, except when I've really given it some beans, or have been on a motorway and then get stuck in traffic, at which point it can rise to about 110 degrees C (that's 194 F, and 230 F to you).
Oil pressure.
When cold, tickover is 6 bar, normal running is 7-8 bar.
When hot, tickover is 3 bar, normal running is 6.5 bar.
The only thing I'd say is that your oil TEMPERATURE sender is in the wrong place. There is a tapping above cylinder No3, which is rearmost, driver's side, and which is the cylinder which is known to run hottest, so it's a good place to put the sender for an early warning. It's why Subaru put the tapping there
Where is the pressure sender? It SHOULD be where the oil pressure SWITCH is now, either replacing it, or via a T-piece.

Just had oil change today , before fitting sandwich plate.
Both senders are fastened into the sandwich pate , not above cylinder 3 as u stated
Looking at ur temp, mine should show some reading on the gauge when warm, even tho mine isn't 2.5L

From: Slowly rebuilding the kit of bits into a car...
The pressure sender may not have an adequate earth, try a wire from the body of the sensor to the battery earth connection, if that works you need to add it permanently.
