What 3 Gauges to buy ?
Ideally you will need a 10 gauge pod to cover all the pockets
Depending on your spec, a boost gauge is more than enough tbh.
Accuracy can be hit and miss and if you need to rely on gauges I would spend some proper money. If you want pretty lights boost/water/oil are most popular.

Celcius for temp, as for pressures go with water you're happiest with. I prefer bar but it is down to choice and whether you are happy with the conversion factor
I'd say boost, oil temp and wideband AFR (or even EGT) myself.
If you're "giving it some" and something happens to oil pressure so it ends up low, your engine is most likely done for anyway. EGT or AFR on the other hand can be used to catch e.g. a failing injector etc, which might not otherwise be visible until rebuild time.
Edit: if you can have more than three gauges, however, then by all means get oil pressure too
