Knackerd brakes discs, pads, uneven tyres pressures, worn springs, dampers, bush's. 4 wheel alignment issues, uneven tyre wear.......................the list goes on...........
Get it 4 wheeled aligned and that should point out any issues with the bush's, steering joints etc.....
You can check tyre pressures and wear easy enough.

Most things have been renewed on the steering and suspension systems. Not done are steering rack and wishbone bushes, the bushes look good though.
Would a worn out steering rack cause the wander? Old car, 93 WRX

You don't have a big brake up-grade on the front (say AP 6 pots or similiar) and standard or knacked brakes on the back do you?
This can make them a bit twitchy. All the things mentioned above are possibilities for sure.

I have the big 19" AP 6 pots on the front with Brembo on rears with grooved discs etc etc, plus large ARBs, coil overs, 3 strut braces etc and the car will still squirm slightly when at speed during braking (say 130 mph, on track of course )...it all depends on how hard you use them and from what speed. There's nowt wrong with my bushes or suspension or rack etc, its just monster speed with monster brakes.
What speeds do you get this squirm at and what brake setup do you have?

4 pots on front from a later car, standard on rear. If I brake hard from say 80-90 its quite hairy, like turning the steering wheel slightly from side to side.

Hmm, well mine at 130 ish isn't hairy, ie it doesn't require skill to keep it under control as she just slides a bit or squirms just a little. 80-90 sounds like things might need replacing or "upgrades", I found new age WRX std suspension (not worn out mind you) to be lacking as power was increased over 300 bhp. What suspension setup do you have and how old is it? You can get sti suspension cheap these days and that will do the job nicely or you can spend more on coil overs - depends on your needs for road/track.

They wouldn't happen to be Yokohama M+S tyres you have there? My Celica GT4 came over with them on, it was great fun to drive once you got used the them letting go all the time

What's your motor like in the corners with no braking? I can only suggest you get a decent garage to look over all the suspension parts to see if bushes are split etc, etc..
