How often do you guys change the oil on your scooby? I used to do it every 6k on my old cars as I wanted good oil in there as often as poss. I am from a mechanic background hence the reason for it.

Depending on the model year - you will get diffrent answers. With the older Imprezas it is 6month/6k anyway.
Newer Inprezas however specify less frequent 12month/10k servicing and different oil grades
