Could driving without the Thermostat cause any major problems (other than when its cold) with the engine

If the air temperature drops across the radiator, say during a long motorway drive, then the water could be constantly cooled to below the optimum range and this will be constantly pumped round the engine. No doubt faster speeds will assist in moving the air out of the engine bay helping to move the temp even lower.
I don't know the effects of temp range on a Subaru engine though, but its a thermostat for a reason, so my guess is the water needs to be at an optimum range for the engine.

Not good!!
If the air is cold, the resulting high flow of cold water can distort the cylinder shape slightly. The resulting opposing cold and hot spots could also cause fatigue in the block and head. Best to run with a stat all the time.
