Did it once on my non-folding rear seat, there are 2 bolts at the backside of the footwells just under the edge of the seat.
Once the bolts are removed you can pull the seat out and you will see 2 more bolts which hold up the backrest.
Once you have unscrewed those you can lift it off upwards and voila!

Well, on my car you just loosen the 2 bolts (in the footwells).
Take out the seat bottom ("twist it" out, by lifting the front slightly and pulling).
Loosen all the bolts you then find. Lift out seat back.
That's it. Very easy once you know about the bolts holding the bottom part.

On my MY99 STI-V (Fixed back seat), it's soo easy, again two bolts to take out seat base, then 3 bolts to remove the seat back...
