The dash itself is quite a bit of work, stripping out the old one takes time, but can be done, there's a thread on here about doing a bugeye iirc, very similar.
While it's out you can take the opportunity to clean, and/or replace the heater matrix, tidy up and secure all wiring to avoid rattles etc.

As for fitting the gauges and pods.......
Are the pods incorporated into the flocked dash?
Do you have all the senders and wiring? All the daisy chain wires? Are some of them to fit on the A-pillar?
What gauges have you? Some are very easy to fit, others not so.
Where do you intend putting the controller? Mine sits where the cupholder wasn't (earier classics, 98 for example got a blanking plate...thanks Subaru you robdogs).

We need more info.

The only one that is in any way difficult is exhaust temp, it needs the exhaust drilled afaik.

So that's a reasonable job in all if you can be bothered with the dash.....I'd do it, but in the Spring. It's a day's job. two with all the senders.

What's this six-stack? Can you post pics? I've only ever seen three in a row.

Fuel pressure is good if Defi, linked to boost to give differential pressure.
