Default oil temperature for winter

Guys I noticed that oil temperature today stuck around 70-75 degrees Celsius which I am sure is dangerous as not hot enough, I thought it should be around 90. When I sat it draft it did kind of hit 80 but not for long. I am using millers 10w 50 nt and I have the standard oil cooler. Is it my defi gauge that is faulty? I have the oil temp sensor screwed into the block near the turbo.

I think he's referring to the oil/water heat exchanger. Hot oil interacting with hot coolant is not really an efficient way of cooling.

What are the coolant temps like, the standard modine can give low oil temps in frosty weather with a lower rated thermostat or a drilled thermostat that is sometimes used.
