I would believe you would have had the car mapped to flow easier, by putting a cat back on, you are then restricting the map, and the exhaust gasses wont be flowing as easy, making the car feel held back, and possibly the turbo not spooling up as easy, my car feels the same when I put the bung in the exhaust, so I try not to use the bung.
